- Puff pastry - 250 grams
- Almond flour - 100 grams
- Powdered sugar - 80 grams
- Unsalted butter, softened - 60 grams
- Egg - 1 large (for filling)
- Vanilla extract - 1 teaspoon
- Orange zest - 1 teaspoon
- Salt - a pinch
- Egg (for egg wash) - 1 large
Steps
- Preheat the oven to 180°C (350°F).
- Roll out the puff pastry on a lightly floured surface to a thickness of about 3 mm.
- Cut two circles from the pastry, each about 15 cm in diameter, and place one on a baking sheet lined with parchment paper.
- In a mixing bowl, combine almond flour, powdered sugar, softened butter, one egg, vanilla extract, orange zest, and a pinch of salt. Mix until smooth and well combined.
- Spread the almond cream mixture evenly on the pastry circle on the baking sheet, leaving a 2 cm border around the edge.
- Place the second pastry circle on top and gently press the edges to seal. Use a fork to crimp the edges for a decorative finish.
- Beat the remaining egg to make an egg wash and brush it over the top of the pastry for a golden finish.
- Using a sharp knife, score a pattern on the top of the pastry without cutting through, then poke a few holes for steam to escape.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
