Ingredients

  • Puff pastry - 250 grams
  • Almond flour - 100 grams
  • Powdered sugar - 80 grams
  • Unsalted butter, softened - 60 grams
  • Egg - 1 large (for filling)
  • Vanilla extract - 1 teaspoon
  • Orange zest - 1 teaspoon
  • Salt - a pinch
  • Egg (for egg wash) - 1 large

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the puff pastry on a lightly floured surface to a thickness of about 3 mm.
  3. Cut two circles from the pastry, each about 15 cm in diameter, and place one on a baking sheet lined with parchment paper.
  4. In a mixing bowl, combine almond flour, powdered sugar, softened butter, one egg, vanilla extract, orange zest, and a pinch of salt. Mix until smooth and well combined.
  5. Spread the almond cream mixture evenly on the pastry circle on the baking sheet, leaving a 2 cm border around the edge.
  6. Place the second pastry circle on top and gently press the edges to seal. Use a fork to crimp the edges for a decorative finish.
  7. Beat the remaining egg to make an egg wash and brush it over the top of the pastry for a golden finish.
  8. Using a sharp knife, score a pattern on the top of the pastry without cutting through, then poke a few holes for steam to escape.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
