  • Olive oil - 2 tablespoons
  • Onion, diced - 1 small (about 100g)
  • Carrot, diced - 1 medium (about 70g)
  • Celery, diced - 1 stalk (about 40g)
  • Garlic, minced - 2 cloves
  • Zucchini, diced - 1 medium (about 150g)
  • Green beans, trimmed and chopped - 100g
  • Potato, diced - 1 medium (about 150g)
  • Vegetable broth - 800 ml
  • Tomatoes, chopped - 2 medium (about 300g)
  • Fresh basil leaves - 1 cup (about 30g)
  • Pine nuts - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat olive oil over medium heat. Add diced onion, carrot, and celery; sauté until softened, about 5 minutes.
  2. Add minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced zucchini, green beans, and potato. Cook for an additional 5 minutes, stirring occasionally.
  4. Pour in the vegetable broth and chopped tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes or until all vegetables are tender.
  5. While the soup simmers, prepare the pistou by blending fresh basil leaves, pine nuts, a pinch of salt, and a tablespoon of olive oil in a food processor until smooth.
  6. Once the soup is ready, season with salt and black pepper to taste. Serve hot in bowls, topped with a generous dollop of pistou.
