Ingredients

  • Pistachio nuts - 80 grams
  • Powdered sugar - 80 grams
  • Aquafaba (chickpea brine) - 100 ml
  • Granulated sugar - 40 grams
  • Vanilla extract - 1 teaspoon
  • Coconut cream - 200 ml (chilled)
  • Maple syrup - 2 tablespoons
  • Lemon zest - 1 teaspoon
  • Fresh pistachios (for garnish) - 10 grams

Steps

  1. Preheat the oven to 160°C (320°F) and line two baking sheets with parchment paper.
  2. In a food processor, blend the pistachio nuts and powdered sugar until finely ground, forming a pistachio flour.
  3. In a mixing bowl, whip the aquafaba until soft peaks form. Gradually add the granulated sugar, continuing to whip until stiff peaks form.
  4. Gently fold the pistachio flour into the whipped aquafaba, being careful not to deflate the mixture. Add the vanilla extract and mix until just combined.
  5. Pipe or spread the meringue mixture onto the prepared baking sheets into two 10 cm (4 inch) circles, smoothing the tops with a spatula.
  6. Bake in the preheated oven for 30-35 minutes, or until the meringue is dry and easily lifts off the parchment paper. Let cool completely.
  7. While the meringues cool, prepare the dairy-free cream by whipping the chilled coconut cream until fluffy. Add the maple syrup and lemon zest, mixing until well combined.
  8. Once the meringues are cool, place one layer on a serving plate and spread half of the coconut cream on top. Add the second meringue layer and spread the remaining cream on top.
  9. Garnish with crushed fresh pistachios and serve immediately.
