Ingredients
- Pistachio nuts - 80 grams
- Powdered sugar - 80 grams
- Aquafaba (chickpea brine) - 100 ml
- Granulated sugar - 40 grams
- Vanilla extract - 1 teaspoon
- Coconut cream - 200 ml (chilled)
- Maple syrup - 2 tablespoons
- Lemon zest - 1 teaspoon
- Fresh pistachios (for garnish) - 10 grams
Steps
- Preheat the oven to 160°C (320°F) and line two baking sheets with parchment paper.
- In a food processor, blend the pistachio nuts and powdered sugar until finely ground, forming a pistachio flour.
- In a mixing bowl, whip the aquafaba until soft peaks form. Gradually add the granulated sugar, continuing to whip until stiff peaks form.
- Gently fold the pistachio flour into the whipped aquafaba, being careful not to deflate the mixture. Add the vanilla extract and mix until just combined.
- Pipe or spread the meringue mixture onto the prepared baking sheets into two 10 cm (4 inch) circles, smoothing the tops with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until the meringue is dry and easily lifts off the parchment paper. Let cool completely.
- While the meringues cool, prepare the dairy-free cream by whipping the chilled coconut cream until fluffy. Add the maple syrup and lemon zest, mixing until well combined.
- Once the meringues are cool, place one layer on a serving plate and spread half of the coconut cream on top. Add the second meringue layer and spread the remaining cream on top.
- Garnish with crushed fresh pistachios and serve immediately.
