Ingredients
- Water - 125 ml
- Butter - 50 g
- Gluten-free all-purpose flour - 65 g
- Eggs - 2 large
- Pistachio paste - 50 g
- Heavy cream - 200 ml
- Powdered sugar - 30 g
- Vanilla extract - 1 tsp
- Pistachio nuts (finely chopped) - for garnish
Steps
- Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
- In a saucepan, combine the water and butter, and bring to a boil.
- Once boiling, remove from heat and add the gluten-free flour, stirring quickly until a dough forms.
- Return the saucepan to low heat and continue stirring for about 2-3 minutes until the dough dries slightly and pulls away from the sides.
- Remove from heat and let the dough cool for about 5 minutes.
- Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Transfer the dough to a piping bag fitted with a large round tip and pipe 10 cm long strips onto the prepared baking tray.
- Bake in the preheated oven for 20-25 minutes until golden and puffed. Do not open the oven door during baking.
- While the éclairs cool, prepare the pistachio cream by whipping the heavy cream until soft peaks form.
- In a separate bowl, mix the pistachio paste and powdered sugar until combined, then fold in the whipped cream gently.
- Once the éclairs are cool, use a small knife to create a slit on the side and fill each éclair with the pistachio cream using a piping bag.
- To make the glaze, mix a little pistachio paste with water to achieve a smooth consistency, then dip the tops of the filled éclairs into the glaze.
- Garnish with finely chopped pistachio nuts and serve immediately.
