- Active dry yeast - 5 grams

- Sugar - 1 teaspoon
- Yellow onions - 3 medium, thinly sliced
- Black olives - 100 grams, pitted and sliced
- Fresh thyme - 1 tablespoon, chopped
- Dried oregano - 1 teaspoon
- Balsamic vinegar - 1 tablespoon
- Black pepper - to taste
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
- Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until they become golden brown and caramelized, about 20 minutes.
- Stir in the balsamic vinegar, thyme, oregano, and season with salt and pepper. Cook for an additional 5 minutes, then remove from heat.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, punch it down and roll it out into a round shape on a floured surface to fit your baking tray.
- Transfer the rolled dough to the baking tray. Spread the caramelized onion mixture evenly over the crust, then scatter the sliced olives on top.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
- Remove from the oven, let cool for a few minutes, slice, and serve warm.
