Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Sugar - 1 teaspoon
  • Yellow onions - 3 medium, thinly sliced
  • Black olives - 100 grams, pitted and sliced
  • Fresh thyme - 1 tablespoon, chopped
  • Dried oregano - 1 teaspoon
  • Balsamic vinegar - 1 tablespoon
  • Black pepper - to taste

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 30 minutes.
  4. Meanwhile, in a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until they become golden brown and caramelized, about 20 minutes.
  5. Stir in the balsamic vinegar, thyme, oregano, and season with salt and pepper. Cook for an additional 5 minutes, then remove from heat.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and roll it out into a round shape on a floured surface to fit your baking tray.
  8. Transfer the rolled dough to the baking tray. Spread the caramelized onion mixture evenly over the crust, then scatter the sliced olives on top.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  10. Remove from the oven, let cool for a few minutes, slice, and serve warm.
