Ingredients

  • Puff pastry - 250 grams
  • Olive oil - 2 tablespoons
  • Yellow onions - 2 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Cherry tomatoes - 150 grams, halved
  • Black olives - 100 grams, pitted and sliced
  • Fresh thyme - 2 teaspoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, about 15 minutes.
  3. Add minced garlic, diced bell pepper, and zucchini to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
  4. Stir in the halved cherry tomatoes, black olives, fresh thyme, black pepper, and balsamic vinegar. Cook for another 3-4 minutes, then remove from heat.
  5. Roll out the puff pastry on a lightly floured surface to fit a baking sheet. Transfer the pastry to the baking sheet.
  6. Spread the vegetable mixture evenly over the puff pastry, leaving a small border around the edges.
  7. Bake in the preheated oven for 20-25 minutes or until the pastry is golden and puffed.
  8. Remove from the oven and let cool slightly before slicing into squares and serving warm.
