- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Black olives - 100 grams, pitted and sliced
- Fresh thyme - 2 teaspoons, chopped
- Salt - to taste
- Black pepper - to taste
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, about 15 minutes.
- Add minced garlic, diced bell pepper, and zucchini to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes, black olives, fresh thyme, black pepper, and balsamic vinegar. Cook for another 3-4 minutes, then remove from heat.
- Roll out the puff pastry on a lightly floured surface to fit a baking sheet. Transfer the pastry to the baking sheet.
- Spread the vegetable mixture evenly over the puff pastry, leaving a small border around the edges.
- Bake in the preheated oven for 20-25 minutes or until the pastry is golden and puffed.
- Remove from the oven and let cool slightly before slicing into squares and serving warm.
