  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Cherry tomatoes - 100 grams, halved
  • Black olives - 50 grams, pitted and sliced
  • Thyme - 1 teaspoon, dried
  • Black pepper - to taste
  • Balsamic vinegar - 1 tablespoon

Steps

  1. In a bowl, combine the flour and salt, then mix in the olive oil and water until a dough forms. Knead briefly until smooth, cover with a cloth, and let it rest for 15 minutes.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, approximately 15-20 minutes.
  3. Add the minced garlic, diced bell pepper, and zucchini to the skillet, cooking for another 5-7 minutes until softened.
  4. Stir in the cherry tomatoes, thyme, and balsamic vinegar. Cook for an additional 5 minutes, then season with black pepper to taste. Remove from heat.
  5. Preheat the oven to 200°C (400°F). Roll out the dough on a floured surface to fit a tart pan. Place the rolled dough into the pan, trimming the edges.
  6. Spread the caramelized vegetable mixture evenly over the crust. Top with sliced black olives.
  7. Bake in the preheated oven for 20-25 minutes or until the crust is golden brown.
  8. Allow to cool for a few minutes before slicing and serving.
