Ingredients

  • All-purpose flour - 200g
  • Active dry yeast - 7g
  • Warm water - 120ml
  • Olive oil - 2 tbsp
  • Salt - 1/2 tsp
  • Onion - 2 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Black olives - 100g, pitted and halved
  • Fresh thyme - 1 tsp, chopped
  • Black pepper - to taste

Steps

  1. In a bowl, mix the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a separate bowl, combine the flour and salt. Make a well in the center, add the yeast mixture and olive oil, and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes.
  4. While the dough is rising, heat 2 tablespoons of olive oil in a pan over medium heat. Add the sliced onions and cook slowly, stirring frequently, for about 15 minutes until they become soft and caramelized.
  5. Add the minced garlic, fresh thyme, and black pepper to the onions. Cook for an additional 2-3 minutes, then remove from heat.
  6. Preheat your oven to 220°C (430°F).
  7. Once the dough has risen, roll it out to fit a 25cm tart pan. Press the dough into the pan and prick the bottom with a fork.
  8. Spread the caramelized onion mixture evenly over the dough. Top with the halved black olives.
  9. Bake in the preheated oven for about 20-25 minutes until the crust is golden brown.
  10. Remove from the oven, let it cool slightly, slice, and serve warm.
