Pissaladière Provençale

Ingredients
- All-purpose flour - 200g
- Active dry yeast - 7g
- Warm water - 120ml
- Olive oil - 2 tbsp
- Salt - 1/2 tsp
- Onion - 2 medium, thinly sliced
- Garlic - 2 cloves, minced
- Black olives - 100g, pitted and halved
- Fresh thyme - 1 tsp, chopped
- Black pepper - to taste
Steps
- In a bowl, mix the warm water and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a separate bowl, combine the flour and salt. Make a well in the center, add the yeast mixture and olive oil, and mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a cloth, and let it rise for 30 minutes.
- While the dough is rising, heat 2 tablespoons of olive oil in a pan over medium heat. Add the sliced onions and cook slowly, stirring frequently, for about 15 minutes until they become soft and caramelized.
- Add the minced garlic, fresh thyme, and black pepper to the onions. Cook for an additional 2-3 minutes, then remove from heat.
- Preheat your oven to 220°C (430°F).
- Once the dough has risen, roll it out to fit a 25cm tart pan. Press the dough into the pan and prick the bottom with a fork.
- Spread the caramelized onion mixture evenly over the dough. Top with the halved black olives.
- Bake in the preheated oven for about 20-25 minutes until the crust is golden brown.
- Remove from the oven, let it cool slightly, slice, and serve warm.
