Ingredients

  • Puff pastry - 200 grams
  • Olive oil - 2 tablespoons
  • Yellow onions - 400 grams, thinly sliced
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Black olives - 100 grams, pitted and halved
  • Capers - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to fit a 20 cm (8 inch) tart pan, then place it in the pan and prick the bottom with a fork.
  3. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 20 minutes.
  4. Add the minced garlic, dried thyme, salt, and black pepper to the onions. Cook for an additional 2-3 minutes until fragrant.
  5. Spread the caramelized onion mixture evenly over the puff pastry base.
  6. Arrange the black olives and capers on top of the onions, pressing them slightly into the mixture.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crisp.
  8. Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley.
  9. Slice and serve warm or at room temperature.
