- Yellow onions - 400 grams, thinly sliced
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Black olives - 100 grams, pitted and halved
- Capers - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to fit a 20 cm (8 inch) tart pan, then place it in the pan and prick the bottom with a fork.
- Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 20 minutes.
- Add the minced garlic, dried thyme, salt, and black pepper to the onions. Cook for an additional 2-3 minutes until fragrant.
- Spread the caramelized onion mixture evenly over the puff pastry base.
- Arrange the black olives and capers on top of the onions, pressing them slightly into the mixture.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and crisp.
- Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley.
- Slice and serve warm or at room temperature.
