Ingredients

  • Cauliflower - 300 grams (for crust)
  • Egg - 1 large
  • Grated Parmesan cheese - 50 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Black olives - 50 grams, pitted and chopped
  • Mixed seafood (shrimp, mussels, and squid) - 200 grams
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a food processor, pulse the cauliflower until it resembles rice. Steam it for about 5 minutes until tender.
  3. Let the steamed cauliflower cool slightly, then mix it with the egg, grated Parmesan cheese, salt, and pepper to form a dough.
  4. Press the cauliflower mixture into a greased round baking dish to form a crust, and bake for 15 minutes until golden.
  5. While the crust is baking, heat olive oil in a skillet over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes.
  6. Stir in the minced garlic and cook for an additional minute. Remove from heat.
  7. In the same skillet, add the mixed seafood and cherry tomatoes, cooking for about 5 minutes until the seafood is just cooked through.
  8. Combine the seafood mixture with the caramelized onions and add the chopped olives and fresh thyme. Season with salt and pepper.
  9. Once the crust is done, remove it from the oven and spread the seafood mixture evenly on top.
  10. Return the dish to the oven and bake for an additional 10 minutes.
  11. Let it cool slightly before slicing and serving.
