  • Black olives - 50 grams, pitted and halved
  • Fresh thyme - 1 teaspoon, chopped

Steps

  1. In a mixing bowl, combine the whole wheat flour, salt, 1 tablespoon of olive oil, and water. Knead into a smooth dough, cover with a cloth, and let it rest for 30 minutes.
  2. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the sliced onions and minced garlic, cooking until the onions are soft and caramelized (about 15 minutes). Stir in the chopped thyme and season with black pepper.
  3. Preheat the oven to 200°C (390°F). Roll out the dough on a floured surface to fit a baking dish. Transfer the dough to the dish and prick it with a fork to prevent bubbling.
  4. Spread the caramelized onion mixture evenly over the dough. Arrange the anchovy fillets on top in a decorative pattern and scatter the black olives.
  5. Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown. Allow to cool slightly before slicing.
