Ingredients

  • Chickpea flour - 100 grams
  • Water - 150 ml
  • Olive oil - 2 tablespoons
  • Onion - 2 medium, thinly sliced
  • Anchovy fillets - 6 pieces
  • Black olives - 50 grams, pitted and sliced
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a bowl, mix the chickpea flour with water, 1 tablespoon of olive oil, salt, and pepper until smooth. Let it rest for 10 minutes.
  2. Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and garlic, cooking until the onions are caramelized, about 15 minutes.
  3. Preheat the oven to 200°C (400°F).
  4. Stir the thyme into the caramelized onions, then remove from heat.
  5. Spread the chickpea flour mixture onto a baking sheet lined with parchment paper, creating a thin, even layer.
  6. Top the chickpea base with the caramelized onion mixture, anchovy fillets, and sliced black olives.
  7. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
  8. Remove from the oven, let cool slightly, then cut into squares and serve warm.
