- Chickpea flour - 100 grams
- Water - 150 ml
- Olive oil - 2 tablespoons

- Anchovy fillets - 6 pieces
- Black olives - 50 grams, pitted and sliced
- Garlic - 2 cloves, minced
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a bowl, mix the chickpea flour with water, 1 tablespoon of olive oil, salt, and pepper until smooth. Let it rest for 10 minutes.
- Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and garlic, cooking until the onions are caramelized, about 15 minutes.
- Preheat the oven to 200°C (400°F).
- Stir the thyme into the caramelized onions, then remove from heat.
- Spread the chickpea flour mixture onto a baking sheet lined with parchment paper, creating a thin, even layer.
- Top the chickpea base with the caramelized onion mixture, anchovy fillets, and sliced black olives.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and crispy.
- Remove from the oven, let cool slightly, then cut into squares and serve warm.
