- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.

- Add the diced bell peppers to the skillet and cook for about 7 minutes, stirring occasionally until they start to soften.
- Stir in the diced tomatoes, thyme, bay leaf, paprika, salt, and black pepper.
