  • Yellow bell pepper - 1 medium, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ripe tomatoes - 3 medium, chopped
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped (for garnish)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the diced bell peppers to the skillet and cook for about 8 minutes, stirring occasionally, until they start to soften.
  5. Mix in the chopped tomatoes, smoked paprika, dried thyme, salt, and black pepper.
  6. Reduce the heat to low, cover the skillet, and let it simmer for 10-15 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh basil.
