- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Dried thyme - 1 teaspoon

- Black pepper - to taste
- Fresh basil - a handful, chopped (for garnish)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced bell peppers to the skillet and cook for about 8 minutes, stirring occasionally, until they start to soften.
- Mix in the chopped tomatoes, smoked paprika, dried thyme, salt, and black pepper.
- Reduce the heat to low, cover the skillet, and let it simmer for 10-15 minutes, stirring occasionally, until the vegetables are tender and the flavors meld together.
- Taste and adjust seasoning if necessary.
