Ingredients
- Red bell pepper - 1 medium
- Green bell pepper - 1 medium
- Yellow bell pepper - 1 medium
- Ripe tomatoes - 2 medium
- Yellow onion - 1 medium
- Garlic - 2 cloves
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 4 leaves
- Grilled kosher sausages - 2 links
Steps
- Preheat your grill to medium-high heat.
- Core and slice the bell peppers into strips, and chop the onion into thin slices.
- In a bowl, combine the sliced peppers, onion, minced garlic, olive oil, smoked paprika, salt, and black pepper. Toss until the vegetables are well coated.
- Place the vegetable mixture in a grill basket or wrap in aluminum foil, then grill for about 15 minutes, stirring occasionally until they are tender and slightly charred.
- While the vegetables are grilling, chop the ripe tomatoes and set aside.
- Once the peppers and onions are cooked, add the chopped tomatoes to the grill basket and cook for an additional 5 minutes.
- Remove the grilled vegetables from the grill and stir in the chopped fresh basil.
- Grill the kosher sausages according to package instructions until they are well cooked and have nice grill marks.
- Serve the grilled sausages on a plate topped with the piperade mixture.
