Ingredients

  • Red bell pepper - 1 medium
  • Green bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Ripe tomatoes - 2 medium
  • Yellow onion - 1 medium
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 4 leaves
  • Grilled kosher sausages - 2 links

Steps

  1. Preheat your grill to medium-high heat.
  2. Core and slice the bell peppers into strips, and chop the onion into thin slices.
  3. In a bowl, combine the sliced peppers, onion, minced garlic, olive oil, smoked paprika, salt, and black pepper. Toss until the vegetables are well coated.
  4. Place the vegetable mixture in a grill basket or wrap in aluminum foil, then grill for about 15 minutes, stirring occasionally until they are tender and slightly charred.
  5. While the vegetables are grilling, chop the ripe tomatoes and set aside.
  6. Once the peppers and onions are cooked, add the chopped tomatoes to the grill basket and cook for an additional 5 minutes.
  7. Remove the grilled vegetables from the grill and stir in the chopped fresh basil.
  8. Grill the kosher sausages according to package instructions until they are well cooked and have nice grill marks.
  9. Serve the grilled sausages on a plate topped with the piperade mixture.
