  • Red bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Zucchini - 1 medium
  • Eggplant - 1 small
  • Red onion - 1 medium
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 leaves
  • Fresh thyme - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the grill to medium heat.
  2. Wash and slice the red and yellow bell peppers into strips, the zucchini and eggplant into rounds, and the red onion into wedges.
  3. Mince the garlic and place all the vegetables in a large bowl.
  4. Drizzle the olive oil over the vegetables and add minced garlic, salt, black pepper, fresh basil, and thyme. Toss to coat evenly.
  5. Place the seasoned vegetables on the grill and cook for about 10-12 minutes, turning occasionally, until they are tender and have grill marks.
