  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced

  • Tomatoes - 400 grams, chopped (canned or fresh)
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped (for garnish)
  • Eggs - 4 large (optional, for serving)

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the diced red and green bell peppers and cook for another 5-7 minutes until softened.
  4. Add the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
  5. Stir in the chopped tomatoes, and season with salt and black pepper. Simmer for about 10-15 minutes until the mixture thickens.
  6. If using eggs, make small wells in the piperade and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are set to your liking.
  7. Garnish with fresh basil before serving.
