- Tomatoes - 400 grams, chopped (canned or fresh)
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped (for garnish)
- Eggs - 4 large (optional, for serving)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the diced red and green bell peppers and cook for another 5-7 minutes until softened.
- Add the minced garlic and smoked paprika, cooking for an additional minute until fragrant.
- Stir in the chopped tomatoes, and season with salt and black pepper. Simmer for about 10-15 minutes until the mixture thickens.
- If using eggs, make small wells in the piperade and crack an egg into each well. Cover the skillet and cook for about 5 minutes, or until the eggs are set to your liking.
- Garnish with fresh basil before serving.
