Steps
- Preheat the barbecue grill to medium-high heat.
- Wash and slice the red, green, and yellow bell peppers into strips.
- Peel and slice the onion into thin rings.
- Mince the garlic cloves.
- Chop the tomatoes into small pieces.
- In a large mixing bowl, combine the bell peppers, onion, garlic, tomatoes, olive oil, salt, black pepper, and smoked paprika. Toss until well coated.
- Transfer the vegetable mixture to a grill basket or wrap it in aluminum foil, creating a packet.
- Place the grill basket or foil packet on the barbecue and cook for 15-20 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and stir in the fresh basil and parsley.
