Ingredients

  • Red bell pepper - 1 medium
  • Green bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Onion - 1 medium
  • Garlic - 2 cloves
  • Tomatoes - 2 medium
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Smoked paprika - 1 teaspoon
  • Fresh basil - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the barbecue grill to medium-high heat.
  2. Wash and slice the red, green, and yellow bell peppers into strips.
  3. Peel and slice the onion into thin rings.
  4. Mince the garlic cloves.
  5. Chop the tomatoes into small pieces.
  6. In a large mixing bowl, combine the bell peppers, onion, garlic, tomatoes, olive oil, salt, black pepper, and smoked paprika. Toss until well coated.
  7. Transfer the vegetable mixture to a grill basket or wrap it in aluminum foil, creating a packet.
  8. Place the grill basket or foil packet on the barbecue and cook for 15-20 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
  9. Remove from the grill and stir in the fresh basil and parsley.
  10. Serve warm as a side dish or as a topping for grilled meats.
