- Red bell pepper - 1 medium, diced

- Green bell pepper - 1 medium, diced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Tomatoes - 2 medium, diced
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 5 leaves, chopped
- Eggs - 4 large
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onion to the skillet and sauté for about 5 minutes, until translucent.
- Stir in the minced garlic and cook for 1 more minute until fragrant.
- Add the diced bell peppers to the skillet and season with salt and black pepper. Cook for 8-10 minutes until they begin to soften.
- Incorporate the diced tomatoes and cook for another 5-7 minutes, stirring occasionally, until the mixture is well combined and heated through.
- Remove the skillet from the heat and stir in the chopped basil.
- In a separate bowl, whisk the eggs until well blended. Pour the eggs over the vegetable mixture in the skillet.
- Return the skillet to low heat and gently stir the eggs into the vegetables until they are just set, about 3-4 minutes.
- Serve warm, garnished with additional basil if desired.
