  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Tomatoes - 2 medium, diced
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 5 leaves, chopped
  • Eggs - 4 large

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onion to the skillet and sauté for about 5 minutes, until translucent.
  3. Stir in the minced garlic and cook for 1 more minute until fragrant.
  4. Add the diced bell peppers to the skillet and season with salt and black pepper. Cook for 8-10 minutes until they begin to soften.
  5. Incorporate the diced tomatoes and cook for another 5-7 minutes, stirring occasionally, until the mixture is well combined and heated through.
  6. Remove the skillet from the heat and stir in the chopped basil.
  7. In a separate bowl, whisk the eggs until well blended. Pour the eggs over the vegetable mixture in the skillet.
  8. Return the skillet to low heat and gently stir the eggs into the vegetables until they are just set, about 3-4 minutes.
  9. Serve warm, garnished with additional basil if desired.
