Ingredients
- Guinea fowl - 1 whole (approximately 1.2 kg)
- Olive oil - 3 tablespoons
- Fresh thyme - 2 sprigs
- Fresh rosemary - 2 sprigs
- Garlic - 4 cloves, minced
- Lemon - 1, zested and juiced
- Salt - 1 teaspoon
- Black pepper - 1 teaspoon
- Carrots - 2, cut into chunks
- Potatoes - 2, cut into quarters
- Onion - 1, quartered
- Chicken broth - 250 ml
Steps
- Preheat your BBQ to medium-high heat (about 200°C).
- In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, salt, and black pepper to create a marinade.
- Rinse the guinea fowl under cold water and pat it dry with paper towels.
- Rub the marinade all over the guinea fowl, making sure to get underneath the skin for maximum flavor.
- Stuff the cavity of the guinea fowl with the thyme, rosemary, and a few lemon slices.
- In a large bowl, toss the carrots, potatoes, and onion with a drizzle of olive oil, salt, and pepper.
- Place the guinea fowl on a roasting rack in a BBQ-safe pan and surround it with the vegetables.
- Pour the chicken broth into the bottom of the pan to keep the meat moist during cooking.
- Cover the pan with aluminum foil and roast on the BBQ for 1 hour.
- After 1 hour, remove the foil and continue to cook for an additional 20-30 minutes, or until the internal temperature reaches 75°C and the skin is golden brown.
- Remove from the BBQ and let the guinea fowl rest for 10 minutes before carving.
- Serve the carved guinea fowl with the roasted vegetables and drizzle some of the pan juices over the top.
