- Garlic - 2 cloves, minced
- Fresh thyme - 1 teaspoon, chopped
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine the red wine, honey, minced garlic, chopped thyme, olive oil, lemon juice, salt, and black pepper to create a marinade.
- Add the guinea fowl pieces to the marinade and ensure they are well coated. Cover and refrigerate for at least 30 minutes.
- While the guinea fowl is marinating, soak the dried prunes in warm water for 10 minutes to soften them, then drain.
- Preheat the BBQ grill to medium-high heat.
- Remove the guinea fowl from the marinade and thread the pieces onto skewers, alternating with the soaked prunes.
- Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the guinea fowl is cooked through and has a nice char.
