Ingredients

  • Guinea fowl (pintade) - 500 grams, cut into pieces
  • Dried prunes - 150 grams, pitted
  • Red wine - 100 ml
  • Honey - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh thyme - 1 teaspoon, chopped
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine the red wine, honey, minced garlic, chopped thyme, olive oil, lemon juice, salt, and black pepper to create a marinade.
  2. Add the guinea fowl pieces to the marinade and ensure they are well coated. Cover and refrigerate for at least 30 minutes.
  3. While the guinea fowl is marinating, soak the dried prunes in warm water for 10 minutes to soften them, then drain.
  4. Preheat the BBQ grill to medium-high heat.
  5. Remove the guinea fowl from the marinade and thread the pieces onto skewers, alternating with the soaked prunes.
  6. Place the skewers on the grill and cook for about 15-20 minutes, turning occasionally, until the guinea fowl is cooked through and has a nice char.
