  • Egg whites - 2 large
  • Granulated sugar - 100 grams
  • Cornstarch - 1 tablespoon
  • White vinegar - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Greek yogurt - 100 grams
  • Honey - 1 tablespoon
  • Mixed fresh fruits (kiwi, strawberries, blueberries) - 150 grams
  • Mint leaves - for garnish

Steps

  1. Preheat the oven to 120°C (250°F) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, whisk the egg whites until soft peaks form, then gradually add the granulated sugar while continuing to whisk until stiff peaks form.
  3. Gently fold in the cornstarch, white vinegar, and vanilla extract until just combined.
  4. Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle with a slight indent in the center to hold the toppings.
  5. Bake in the preheated oven for 1 hour, then turn off the oven and let the meringue cool inside for at least 30 minutes.
  6. While the meringue cools, mix the Greek yogurt with honey in a small bowl until smooth.
  7. Once the meringue is completely cool, carefully remove it from the parchment paper and place it on a serving plate.
  8. Spread the honeyed Greek yogurt evenly over the top of the meringue.
  9. Arrange the mixed fresh fruits on top of the yogurt layer.
  10. Garnish with mint leaves before serving.
