- Cornstarch - 1 tablespoon
- White vinegar - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Greek yogurt - 100 grams
- Honey - 1 tablespoon
- Mixed fresh fruits (kiwi, strawberries, blueberries) - 150 grams
- Mint leaves - for garnish
Steps
- Preheat the oven to 120°C (250°F) and line a baking sheet with parchment paper.
- In a clean, dry bowl, whisk the egg whites until soft peaks form, then gradually add the granulated sugar while continuing to whisk until stiff peaks form.
- Gently fold in the cornstarch, white vinegar, and vanilla extract until just combined.
- Spoon the meringue mixture onto the prepared baking sheet, shaping it into a circle with a slight indent in the center to hold the toppings.
- Bake in the preheated oven for 1 hour, then turn off the oven and let the meringue cool inside for at least 30 minutes.
- While the meringue cools, mix the Greek yogurt with honey in a small bowl until smooth.
- Once the meringue is completely cool, carefully remove it from the parchment paper and place it on a serving plate.
- Spread the honeyed Greek yogurt evenly over the top of the meringue.
- Arrange the mixed fresh fruits on top of the yogurt layer.
- Garnish with mint leaves before serving.
