  • Egg whites - 2 large
  • Granulated sugar - 120 grams
  • Cornstarch - 1 teaspoon
  • White vinegar - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Heavy cream - 100 ml
  • Powdered sugar - 1 tablespoon
  • Mixed fresh fruits (kiwi, berries, passion fruit) - 150 grams

Steps

  1. Preheat the oven to 120°C (250°F) and line a baking sheet with parchment paper.
  2. In a clean, dry bowl, whisk the egg whites on medium speed until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, whisking until the mixture is glossy and forms stiff peaks.
  4. Gently fold in the cornstarch, vinegar, and vanilla extract until just combined.
  5. Spoon the meringue onto the prepared baking sheet, shaping it into a round disk with a slight indentation in the center.
  6. Bake in the preheated oven for 1 hour, then turn off the oven and let the meringue cool completely inside the oven with the door slightly ajar.
  7. While the meringue cools, whip the heavy cream with powdered sugar until soft peaks form.
  8. Once the meringue is cool, carefully transfer it to a serving plate and top with the whipped cream and mixed fresh fruits.
