- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Black olives (pitted) - 100 grams, sliced
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (optional) - 30 grams, grated
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Stir in the halved cherry tomatoes and sliced black olives. Cook for an additional 3-4 minutes until the tomatoes start to soften.
- Add the cooked pasta to the skillet, tossing everything together. Season with salt, black pepper, and chopped basil to taste.
