- Pasta (spaghetti or your choice) - 200g
- Fresh basil leaves - 50g
- Garlic - 2 cloves
- Walnuts - 30g
- Nutritional yeast - 3 tablespoons
- Olive oil - 60ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100g (optional, for garnish)
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente.
- While the pasta cooks, prepare the pesto by combining the fresh basil, garlic, walnuts, nutritional yeast, olive oil, and lemon juice in a food processor.
- Blend until smooth, adding a little water if necessary to achieve desired consistency. Season with salt and black pepper to taste.
- Once the pasta is cooked, drain it, reserving a little pasta water.
- Toss the cooked pasta with the pesto sauce, adding reserved pasta water as needed to help coat the pasta evenly.
- Serve immediately, garnished with halved cherry tomatoes if desired.
