Ingredients

  • Pasta (spaghetti or your choice) - 200g
  • Fresh basil leaves - 50g
  • Garlic - 2 cloves
  • Walnuts - 30g
  • Nutritional yeast - 3 tablespoons
  • Olive oil - 60ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100g (optional, for garnish)

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente.
  2. While the pasta cooks, prepare the pesto by combining the fresh basil, garlic, walnuts, nutritional yeast, olive oil, and lemon juice in a food processor.
  3. Blend until smooth, adding a little water if necessary to achieve desired consistency. Season with salt and black pepper to taste.
  4. Once the pasta is cooked, drain it, reserving a little pasta water.
  5. Toss the cooked pasta with the pesto sauce, adding reserved pasta water as needed to help coat the pasta evenly.
  6. Serve immediately, garnished with halved cherry tomatoes if desired.
