  • Whole grain spaghetti - 150 grams

  • Mushrooms (preferably shiitake or cremini) - 150 grams, sliced
  • Vegetable broth - 200 ml
  • Heavy cream (or a light alternative) - 50 ml
  • Fresh truffle (or truffle oil) - 10 grams (or 1 teaspoon if using oil)
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (optional) - 20 grams, grated

Steps

  1. Cook the whole grain spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they are tender and golden brown.
  4. Pour in the vegetable broth and bring to a gentle simmer. Let it reduce slightly for about 5 minutes.
  5. Stir in the heavy cream and season with salt and black pepper. Allow it to simmer for another 2-3 minutes until the sauce thickens slightly.
  6. Add the cooked spaghetti to the skillet, tossing it in the sauce to coat evenly. If the sauce is too thick, add a bit of reserved pasta water to reach the desired consistency.
  7. Remove from heat and shave fresh truffle over the pasta or drizzle with truffle oil. Toss gently to combine.
  8. Serve immediately, garnished with chopped parsley and grated Parmesan cheese if desired.
