- Vegetable broth - 200 ml

- Fresh parsley - 2 tablespoons, chopped

- Parmesan cheese (optional) - 20 grams, grated
Steps
- Cook the whole grain spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they are tender and golden brown.
- Pour in the vegetable broth and bring to a gentle simmer. Let it reduce slightly for about 5 minutes.
- Stir in the heavy cream and season with salt and black pepper. Allow it to simmer for another 2-3 minutes until the sauce thickens slightly.
- Add the cooked spaghetti to the skillet, tossing it in the sauce to coat evenly. If the sauce is too thick, add a bit of reserved pasta water to reach the desired consistency.
- Remove from heat and shave fresh truffle over the pasta or drizzle with truffle oil. Toss gently to combine.
- Serve immediately, garnished with chopped parsley and grated Parmesan cheese if desired.
