  • Ripe avocado - 1 medium
  • Garlic - 2 cloves
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams (optional)

Steps

  1. Bring a pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, prepare the sauce: In a blender, combine fresh spinach, basil, avocado, garlic, lemon juice, and olive oil. Blend until smooth and creamy.
  3. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and return it to the pot.
