- Black pepper - to taste
- Parmesan cheese - 30 grams (optional)
Steps
- Bring a pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, prepare the sauce: In a blender, combine fresh spinach, basil, avocado, garlic, lemon juice, and olive oil. Blend until smooth and creamy.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and return it to the pot.
- Add the green sauce to the pasta, mixing well. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.
