- Vegetable broth - 200 milliliters
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh basil - 10 grams
- Salt - to taste
- Black pepper - to taste
- Chili flakes - a pinch (optional)
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
- In a dry skillet over medium heat, toast the raw almonds for about 5 minutes until golden, stirring frequently. Remove from heat and let cool.
- In a blender or food processor, combine the toasted almonds, garlic, olive oil, vegetable broth, nutritional yeast, lemon juice, fresh basil, salt, and black pepper. Blend until smooth and creamy.
- In the same skillet, pour the almond sauce and heat gently over low heat for about 2-3 minutes, stirring constantly. If the sauce is too thick, add a little more vegetable broth to reach your desired consistency.
