- Zucchini - 1 medium, diced
- Red bell pepper - 1, diced
- Black olives - 50 grams, pitted and sliced
- Fresh basil - 10 grams, chopped
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Cook the whole wheat pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes, zucchini, and red bell pepper to the skillet. Sauté for 5-7 minutes until the vegetables are tender.
- Stir in the black olives, dried thyme, salt, and black pepper. Cook for an additional 2 minutes.
