  • Low-fat crème fraîche - 100 grams
  • Dijon mustard - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until translucent, about 2-3 minutes.
  3. Add the diced zucchini, carrot, and bell pepper to the skillet. Sauté the vegetables for about 5-7 minutes until they are tender but still crisp.
