- Pasta (penne or fusilli) - 200 grams
- Raw cashews - 100 grams
- Nutritional yeast - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 1/4 cup, chopped
- Fresh parsley - 1/4 cup, chopped
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams
Steps
- Soak the raw cashews in water for at least 2 hours, or boil them for 10 minutes if short on time, then drain.
- Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a blender or food processor, combine soaked cashews, nutritional yeast, lemon juice, minced garlic, and a pinch of salt. Blend until smooth and creamy, adding reserved pasta water as needed to reach desired consistency.
- In a large skillet, heat olive oil over medium heat. Add the halved cherry tomatoes and sauté for 3-4 minutes until they start to soften.
- Add the cooked pasta and spinach to the skillet, then pour the cashew cream over the top. Toss everything together until well coated and heated through, about 2-3 minutes.
- Stir in the chopped basil and parsley, then season with salt and black pepper to taste.
- Serve immediately, garnished with additional fresh herbs if desired.
