  • Whole wheat penne pasta - 150 grams
  • Greek yogurt - 100 grams
  • Parmesan cheese, grated - 50 grams
  • Mozzarella cheese, shredded - 100 grams
  • Cooked chicken breast, diced - 150 grams
  • Spinach, fresh - 100 grams
  • Garlic, minced - 2 cloves
  • Olive oil - 1 tablespoon
  • Nutmeg, grated - 1/4 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Breadcrumbs - 30 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cook the pasta according to package instructions until al dente, drain, and set aside.
  3. In a large skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. In a mixing bowl, combine Greek yogurt, grated Parmesan cheese, nutmeg, salt, and black pepper to create a creamy sauce.
  6. In the skillet with spinach, add the cooked chicken and drained pasta, then pour the creamy sauce over the mixture and stir to combine.
  7. Transfer the pasta mixture to a greased baking dish and top with shredded mozzarella cheese and breadcrumbs.
  8. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes before serving.
