- Cherry tomatoes (halved) - 150 grams
- Spinach (fresh) - 100 grams
- Parmesan cheese (grated) - 30 grams

- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Fresh basil (for garnish) - a few leaves
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper and sauté for about 5 minutes until softened.
- Add the minced garlic and Italian sausage to the skillet, breaking the sausage into smaller pieces with a wooden spoon. Cook until the sausage is browned and cooked through, about 7-10 minutes.
- Stir in the cherry tomatoes and cook for another 3-4 minutes until they begin to soften.
- Add the fresh spinach and cooked pasta to the skillet. Toss everything together and cook for an additional 2-3 minutes until the spinach wilts. Season with salt, black pepper, and red pepper flakes if using.
- Remove from heat and stir in the grated Parmesan cheese. Serve hot, garnished with fresh basil leaves.
