  • Onion (finely chopped) - 1 medium
  • Bell pepper (diced) - 1 medium
  • Cherry tomatoes (halved) - 150 grams
  • Spinach (fresh) - 100 grams
  • Parmesan cheese (grated) - 30 grams
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Fresh basil (for garnish) - a few leaves

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper and sauté for about 5 minutes until softened.
  3. Add the minced garlic and Italian sausage to the skillet, breaking the sausage into smaller pieces with a wooden spoon. Cook until the sausage is browned and cooked through, about 7-10 minutes.
  4. Stir in the cherry tomatoes and cook for another 3-4 minutes until they begin to soften.
  5. Add the fresh spinach and cooked pasta to the skillet. Toss everything together and cook for an additional 2-3 minutes until the spinach wilts. Season with salt, black pepper, and red pepper flakes if using.
  6. Remove from heat and stir in the grated Parmesan cheese. Serve hot, garnished with fresh basil leaves.
