- Mixed mushrooms (cremini, shiitake, and oyster) - 200 grams, sliced
- Garlic - 2 cloves, minced
- Shallot - 1, finely chopped
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Parsley - 2 tablespoons, chopped
- Vegetable broth - 200 ml
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes (optional) - a pinch
Steps
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and garlic, sautéing for about 2 minutes until fragrant.
- Add the sliced mushrooms to the skillet and sauté for about 5-7 minutes until they are tender and browned.
- Pour in the vegetable broth and bring to a simmer. Add the chopped thyme, salt, black pepper, and red pepper flakes (if using). Simmer for another 5 minutes to allow the flavors to meld.
- Toss in the cooked pasta, adding a splash of reserved pasta water if needed to help coat the pasta. Mix well to combine all ingredients.
- Remove from heat and stir in the chopped parsley before serving. Adjust seasoning to taste.
