Ingredients

  • Whole grain spaghetti - 150 grams
  • Eggs - 2 large
  • Grated Parmesan cheese - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Zucchini - 1 medium, spiralized or sliced
  • Cherry tomatoes - 100 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the whole grain spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Add the spiralized or sliced zucchini to the skillet and cook for 3-4 minutes until slightly softened, then add the halved cherry tomatoes and cook for an additional 2 minutes.
  5. Reduce the heat to low, then add the cooked spaghetti to the skillet with the vegetables.
  6. Pour the egg and cheese mixture over the spaghetti, tossing quickly to combine and create a creamy sauce. Add reserved pasta water a little at a time until the desired consistency is achieved.
  7. Season with salt and black pepper to taste, then sprinkle with fresh parsley before serving.
