- Whole grain spaghetti - 150 grams
- Eggs - 2 large
- Grated Parmesan cheese - 50 grams
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Zucchini - 1 medium, spiralized or sliced
- Cherry tomatoes - 100 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the whole grain spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Add the spiralized or sliced zucchini to the skillet and cook for 3-4 minutes until slightly softened, then add the halved cherry tomatoes and cook for an additional 2 minutes.
- Reduce the heat to low, then add the cooked spaghetti to the skillet with the vegetables.
- Pour the egg and cheese mixture over the spaghetti, tossing quickly to combine and create a creamy sauce. Add reserved pasta water a little at a time until the desired consistency is achieved.
- Season with salt and black pepper to taste, then sprinkle with fresh parsley before serving.
