  • Yellow bell pepper - 1 large
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams
  • Parmesan cheese (optional) - 30 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the red and yellow bell peppers into strips and place them on a baking sheet.
  3. Drizzle the bell peppers with 1 tablespoon of olive oil, and season with salt and black pepper.
  4. Roast the bell peppers in the oven for 20 minutes or until they are tender and slightly charred.
  5. While the peppers are roasting, cook the pasta according to package instructions until al dente.
  6. In a skillet, heat the remaining tablespoon of olive oil over medium heat and add minced garlic, sautéing for about 1 minute until fragrant.
  7. Once the pasta is cooked, drain it and add it to the skillet with garlic, along with the roasted bell peppers.
  8. Toss everything together to combine well, and add chopped fresh basil.
