Steps
- Preheat the oven to 200°C (400°F).
- Slice the red and yellow bell peppers into strips and place them on a baking sheet.
- Drizzle the bell peppers with 1 tablespoon of olive oil, and season with salt and black pepper.
- Roast the bell peppers in the oven for 20 minutes or until they are tender and slightly charred.
- While the peppers are roasting, cook the pasta according to package instructions until al dente.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat and add minced garlic, sautéing for about 1 minute until fragrant.
- Once the pasta is cooked, drain it and add it to the skillet with garlic, along with the roasted bell peppers.
