- Yellow bell pepper - 1 medium, sliced
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 grams, chopped
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced red and yellow bell peppers to the skillet and cook for 5-7 minutes, stirring occasionally, until they are tender.
- Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften.
- Add the cooked pasta to the skillet, along with the reserved pasta water. Toss everything together to combine and heat through.
- Season with salt, black pepper, and nutritional yeast (if using) to taste.
- Remove from heat and stir in the chopped fresh basil just before serving.
