- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add the sliced leeks to the skillet and sauté for about 5-7 minutes until they become soft and translucent.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the vegetable broth and let it simmer for about 5 minutes, allowing the flavors to meld.
- Add the nutritional yeast, lemon juice, salt, and black pepper to the leek mixture, stirring well.
- Once the pasta is done cooking, reserve a small cup of the pasta water, then drain the pasta.
- Add the drained pasta to the skillet with the leeks and toss to combine, adding reserved pasta water if necessary to reach desired creaminess.
- Serve hot, garnished with fresh parsley.
