  • Vegetable broth - 250 ml
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the sliced leeks to the skillet and sauté for about 5-7 minutes until they become soft and translucent.
  4. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  5. Pour in the vegetable broth and let it simmer for about 5 minutes, allowing the flavors to meld.
  6. Add the nutritional yeast, lemon juice, salt, and black pepper to the leek mixture, stirring well.
  7. Once the pasta is done cooking, reserve a small cup of the pasta water, then drain the pasta.
  8. Add the drained pasta to the skillet with the leeks and toss to combine, adding reserved pasta water if necessary to reach desired creaminess.
  9. Serve hot, garnished with fresh parsley.
