  • Fresh spinach - 200 grams
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
  5. Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
  6. Add the drained pasta to the skillet with the spinach and garlic, mixing well.
  7. If the mixture seems dry, add a little reserved pasta water to achieve desired consistency.
  8. Stir in grated Parmesan cheese, lemon juice, salt, black pepper, and red pepper flakes (if using) until well combined.
  9. Serve immediately, garnished with extra Parmesan if desired.
