- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon (optional)
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
- Once the pasta is cooked, reserve a cup of pasta water and drain the rest.
- Add the drained pasta to the skillet with the spinach and garlic, mixing well.
- If the mixture seems dry, add a little reserved pasta water to achieve desired consistency.
- Stir in grated Parmesan cheese, lemon juice, salt, black pepper, and red pepper flakes (if using) until well combined.
- Serve immediately, garnished with extra Parmesan if desired.
