- Pasta (spaghetti or linguine) - 150 grams
- Walnuts - 100 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the chopped walnuts to the skillet and toast them lightly for about 3-4 minutes, stirring frequently to prevent burning.
- Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and drain the rest.
- Add the drained pasta to the skillet with garlic and walnuts, then pour in the reserved pasta cooking water, nutritional yeast, lemon juice, salt, and pepper. Toss well to combine.
- Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary.
- Serve immediately, garnished with extra parsley and walnuts if desired.
