Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Walnuts - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Nutritional yeast - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a skillet over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the chopped walnuts to the skillet and toast them lightly for about 3-4 minutes, stirring frequently to prevent burning.
  4. Once the pasta is cooked, reserve 1/2 cup of the pasta cooking water and drain the rest.
  5. Add the drained pasta to the skillet with garlic and walnuts, then pour in the reserved pasta cooking water, nutritional yeast, lemon juice, salt, and pepper. Toss well to combine.
  6. Remove from heat and stir in the chopped parsley. Adjust seasoning if necessary.
  7. Serve immediately, garnished with extra parsley and walnuts if desired.
