Ingredients

  • Pasta (e.g., penne or fusilli) - 200 grams
  • Green or brown lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Bay leaf - 1
  • Thyme (dried) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a medium pot, bring 500 ml of vegetable broth to a boil and add the lentils along with the bay leaf and dried thyme. Reduce heat and simmer for about 20 minutes, or until tender.
  3. While the lentils are cooking, bring a separate pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery; sauté for about 5-7 minutes until the vegetables are softened.
  5. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  6. Once the lentils are cooked, drain any excess liquid and add them to the skillet with the sautéed vegetables. Stir to combine and season with salt and black pepper to taste.
  7. Add the cooked pasta to the skillet and gently toss everything together to combine, allowing the flavors to meld for 2-3 minutes.
  8. Remove from heat, garnish with chopped fresh parsley, and serve warm.
