Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Fresh fava beans - 200 grams (shelled)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 120 milliliters
  • Fresh basil - 10 grams, chopped
  • Fresh mint - 10 grams, chopped
  • Lemon zest - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shelled fava beans to the skillet and pour in the vegetable broth. Cook for 5-7 minutes, stirring occasionally, until the fava beans are tender.
  4. Once the pasta is ready, drain it and add it to the skillet with the fava beans. Toss everything together to combine.
  5. Add the chopped basil, mint, lemon zest, and lemon juice to the pasta. Season with salt and black pepper to taste. Toss well to mix all the ingredients.
