- Fresh fava beans - 200 grams (shelled)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 120 milliliters
- Fresh basil - 10 grams, chopped
- Fresh mint - 10 grams, chopped
- Lemon zest - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shelled fava beans to the skillet and pour in the vegetable broth. Cook for 5-7 minutes, stirring occasionally, until the fava beans are tender.
- Once the pasta is ready, drain it and add it to the skillet with the fava beans. Toss everything together to combine.
- Add the chopped basil, mint, lemon zest, and lemon juice to the pasta. Season with salt and black pepper to taste. Toss well to mix all the ingredients.
