  • Cherry tomatoes - 150 grams, halved
  • Fresh basil - 10 grams, chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, wash and slice the zucchinis into thin half-moons.
  3. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add the sliced zucchini to the skillet and cook for about 5 minutes, stirring occasionally, until they are tender but still slightly crisp.
  5. Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they soften.
  6. Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it to the skillet with the zucchini and tomatoes.
  7. Toss the pasta with the vegetables, adding a splash of reserved pasta water if needed to help combine the ingredients.
  8. Season with salt, black pepper, and fresh basil, mixing well.
  9. Serve immediately, topped with grated Parmesan cheese.
