- Cherry tomatoes - 150 grams, halved
- Fresh basil - 10 grams, chopped
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the whole grain pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, wash and slice the zucchinis into thin half-moons.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
- Add the sliced zucchini to the skillet and cook for about 5 minutes, stirring occasionally, until they are tender but still slightly crisp.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes until they soften.
- Once the pasta is cooked, reserve a cup of pasta water, then drain the pasta and add it to the skillet with the zucchini and tomatoes.
- Toss the pasta with the vegetables, adding a splash of reserved pasta water if needed to help combine the ingredients.
- Season with salt, black pepper, and fresh basil, mixing well.
- Serve immediately, topped with grated Parmesan cheese.
