  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 milliliters
  • Fresh thyme - 1 teaspoon, chopped
  • Parmesan cheese - 30 grams, grated (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Cook the whole wheat pasta according to package instructions in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté for 2-3 minutes until softened.
  3. Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
  4. Pour in the vegetable broth and add the chopped thyme. Bring to a simmer and let it cook for another 5 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
  5. Add the cooked pasta to the mushroom sauce, tossing gently to combine. If the sauce is too thick, add some reserved pasta water until the desired consistency is reached.
  6. Serve immediately, topped with grated Parmesan cheese (if using) and garnished with fresh parsley.
