- Vegetable broth - 200 milliliters
- Fresh thyme - 1 teaspoon, chopped
- Parmesan cheese - 30 grams, grated (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Cook the whole wheat pasta according to package instructions in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté for 2-3 minutes until softened.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
- Pour in the vegetable broth and add the chopped thyme. Bring to a simmer and let it cook for another 5 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- Add the cooked pasta to the mushroom sauce, tossing gently to combine. If the sauce is too thick, add some reserved pasta water until the desired consistency is reached.
- Serve immediately, topped with grated Parmesan cheese (if using) and garnished with fresh parsley.
