Ingredients

  • Pasta (spaghetti or fettuccine) - 150 grams
  • Fresh asparagus - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Nutritional yeast - 3 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, trim the woody ends off the asparagus and cut the spears into 2-inch pieces.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the asparagus pieces to the skillet and sauté for 5-7 minutes, until they are tender but still crisp.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the asparagus.
  6. Pour in the lemon juice and sprinkle the nutritional yeast over the pasta. Toss everything together, adding reserved pasta water as needed to create a light sauce.
  7. Season with salt and black pepper to taste. Garnish with chopped parsley before serving.
