- Pasta (spaghetti or fettuccine) - 150 grams
- Fresh asparagus - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Nutritional yeast - 3 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, trim the woody ends off the asparagus and cut the spears into 2-inch pieces.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the asparagus pieces to the skillet and sauté for 5-7 minutes, until they are tender but still crisp.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the asparagus.
- Pour in the lemon juice and sprinkle the nutritional yeast over the pasta. Toss everything together, adding reserved pasta water as needed to create a light sauce.
- Season with salt and black pepper to taste. Garnish with chopped parsley before serving.
