- Fresh parsley - 2 tablespoons, chopped

Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned.
- Add the artichoke hearts and cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes are softened.
- Stir in the cooked pasta, lemon juice, and reserved pasta water. Toss everything together and cook for another 2-3 minutes to combine flavors.
- Remove from heat, add chopped parsley, and season with salt and black pepper to taste. If desired, sprinkle with grated Parmesan cheese before serving.
