- Garlic - 2 cloves, minced
- Cherry tomatoes - 150 grams, halved
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced chicken breast to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
- Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften slightly.
- Once the pasta is cooked, drain it and reserve a little pasta water. Add the pasta to the skillet with the chicken and tomatoes.
- Toss everything together, adding a bit of reserved pasta water if needed to create a light sauce. Season with salt and black pepper to taste.
- Remove from heat and stir in the chopped fresh basil. Serve immediately, garnished with grated Parmesan cheese if desired.
