  • Pasta (penne or fusilli) - 200 grams
  • Chicken breast - 250 grams, diced
  • Fresh basil - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced chicken breast to the skillet and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
  4. Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften slightly.
  5. Once the pasta is cooked, drain it and reserve a little pasta water. Add the pasta to the skillet with the chicken and tomatoes.
  6. Toss everything together, adding a bit of reserved pasta water if needed to create a light sauce. Season with salt and black pepper to taste.
  7. Remove from heat and stir in the chopped fresh basil. Serve immediately, garnished with grated Parmesan cheese if desired.
