Ingredients

  • Pasta (spaghetti or fusilli) - 150 grams
  • Fresh basil leaves - 30 grams
  • Garlic - 2 cloves
  • Pine nuts - 15 grams
  • Nutritional yeast - 2 tablespoons
  • Olive oil - 60 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 150 grams, halved
  • Zucchini - 1 medium, diced
  • Green beans - 100 grams, trimmed
  • Water - 1 liter

Steps

  1. Bring 1 liter of salted water to a boil in a large pot.
  2. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  3. While the pasta is cooking, prepare the pistou sauce. In a food processor, combine the basil leaves, garlic, pine nuts, nutritional yeast, and a pinch of salt.
  4. With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Adjust salt and pepper to taste.
  5. In the last 5 minutes of cooking the pasta, add the zucchini and green beans to the pot.
  6. Once the pasta and vegetables are cooked, drain them and return to the pot.
  7. Add the pistou sauce to the pasta and vegetables, tossing well to coat evenly.
  8. Finally, add the halved cherry tomatoes and gently mix them in.
  9. Serve immediately, garnished with extra basil if desired.
