- Pasta (spaghetti or fusilli) - 150 grams
- Fresh basil leaves - 30 grams
- Garlic - 2 cloves
- Pine nuts - 15 grams
- Nutritional yeast - 2 tablespoons
- Olive oil - 60 milliliters
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 150 grams, halved
- Zucchini - 1 medium, diced
- Green beans - 100 grams, trimmed
- Water - 1 liter
Steps
- Bring 1 liter of salted water to a boil in a large pot.
- Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, prepare the pistou sauce. In a food processor, combine the basil leaves, garlic, pine nuts, nutritional yeast, and a pinch of salt.
- With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Adjust salt and pepper to taste.
- In the last 5 minutes of cooking the pasta, add the zucchini and green beans to the pot.
- Once the pasta and vegetables are cooked, drain them and return to the pot.
- Add the pistou sauce to the pasta and vegetables, tossing well to coat evenly.
- Finally, add the halved cherry tomatoes and gently mix them in.
- Serve immediately, garnished with extra basil if desired.
