- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams, chopped
- Black pepper - to taste
- Salt - to taste
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes and cook for about 3-4 minutes until they start to soften.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Once the pasta is cooked, drain it and reserve about 1/2 cup of the pasta water.
- Add the drained pasta to the skillet with the vegetables, and toss to combine.
- Add the crumbled goat cheese, fresh basil, and a splash of the reserved pasta water to create a creamy sauce, mixing well until the cheese melts slightly.
- Season with salt and black pepper to taste.
- Serve warm, topped with grated Parmesan cheese if desired.
