Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Fresh basil leaves - 50 grams
  • Garlic - 2 cloves
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100 grams

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the basil sauce by combining the fresh basil leaves, garlic, olive oil, lemon juice, nutritional yeast, salt, and black pepper in a blender or food processor.
  3. Blend until smooth and creamy, adjusting the consistency with a bit of water if necessary.
  4. Once the pasta is cooked, drain it and reserve about 1/4 cup of the pasta water.
  5. In a large mixing bowl, combine the cooked pasta with the basil sauce, adding reserved pasta water a little at a time until the desired creaminess is achieved.
  6. Halve the cherry tomatoes and gently fold them into the pasta.
  7. Serve immediately, garnished with extra basil leaves and a sprinkle of nutritional yeast if desired.
