- Pasta (spaghetti or linguine) - 150 grams
- Fresh basil leaves - 50 grams
- Garlic - 2 cloves
- Olive oil - 3 tablespoons
- Lemon juice - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 100 grams
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente.
- While the pasta is cooking, prepare the basil sauce by combining the fresh basil leaves, garlic, olive oil, lemon juice, nutritional yeast, salt, and black pepper in a blender or food processor.
- Blend until smooth and creamy, adjusting the consistency with a bit of water if necessary.
- Once the pasta is cooked, drain it and reserve about 1/4 cup of the pasta water.
- In a large mixing bowl, combine the cooked pasta with the basil sauce, adding reserved pasta water a little at a time until the desired creaminess is achieved.
- Halve the cherry tomatoes and gently fold them into the pasta.
- Serve immediately, garnished with extra basil leaves and a sprinkle of nutritional yeast if desired.
